Ingredients
For the Mac and Cheese:
- 12 oz elbow macaroni (or shells/rotini)
- 1 lb lean ground beef
- 6 slices turkey bacon
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 2 cups milk
- 2 tbsp butter
- 2 tbsp all-purpose flour
- ½ tsp garlic powder (optional)
- Salt and pepper to taste
For the Topping:
- ½ cup bread crumbs
- Extra shredded cheese (optional)
- Chopped dill pickles (optional)
Instructions
- Cook the Pasta:
Preheat your oven to 375°F (190°C). Cook 12 oz of macaroni according to the package instructions until al dente. Drain and set aside. - Cook the Turkey Bacon and Beef:
In a large skillet, cook 6 slices of turkey bacon until crispy. Remove and place them on a paper towel-lined plate.
In the same skillet, cook 1 lb of lean ground beef until browned, breaking it apart with a spatula. Drain any excess fat and season with salt and pepper. - Prepare the Cheese Sauce:
In a saucepan, melt 2 tbsp of butter over medium heat. Add 2 tbsp of flour, whisking for about 1 minute to form a roux. Gradually pour in 2 cups of milk, whisking constantly until thickened. Stir in 2 cups of shredded cheddar cheese and 1 cup of shredded mozzarella cheese until melted. Add garlic powder, salt, and pepper to taste. - Combine Ingredients:
In a large bowl, mix the cooked pasta, ground beef, half the turkey bacon (chopped), and the cheese sauce until well combined. Pour the mixture into a greased 9×13-inch baking dish. - Add Toppings:
Sprinkle ½ cup of bread crumbs and the remaining turkey bacon (crumbled) on top. Optionally, add more shredded cheese or chopped pickles for an extra twist. - Bake:
Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and bubbling. Remove from the oven and let it cool for a few minutes before serving.
Notes
Ingredient Tips
- Pasta: While elbow macaroni is the go-to choice for its classic texture, feel free to use rotini or shells for a modern twist. Gluten-free pasta can be easily substituted without altering the recipe.
- Cheese: A mix of cheddar cheese and mozzarella cheese creates the perfect blend of creaminess and stretchiness. Experiment with other cheeses like Gouda or Monterey Jack to customize the flavor.
- Bacon: For the best texture, cook the bacon separately to ensure it stays crispy before adding it to the dish.
- Bread Crumbs: Panko crumbs create an especially crunchy topping, but traditional bread crumbs work well too. A light drizzle of melted butter over the crumbs before baking enhances their golden color.
Optional Additions
- Add chopped dill pickles for a tangy cheeseburger-inspired twist.
- Incorporate diced jalapeños for a spicy version.
- Include sautéed onions or mushrooms to add depth and balance to the dish.
Cooking Tips
- Be careful not to overcook the pasta—it should be al dente since it will continue to cook in the oven.
- If your cheese sauce seems too thick, add a splash of milk to adjust the consistency.
Customization Ideas
- Substitute ground turkey or plant-based ground meat for a healthier or vegetarian alternative.
- For a smoky BBQ spin, drizzle a small amount of barbecue sauce over the top before adding the bread crumbs.
